Fruit
Processing
Alpine
Gold is committed to producing a unique range of juices of the highest
quality.
Stonefruit - Nectarines
and Apricots
All stonefruit is purchased from local growers who specifically tree-ripen
the fruit. The time from picking
to processing is kept to a minimum and fruit is hand-graded as it is processed
to remove any fruit not up to standard. Fruit is then fed into the pupler/finisher,
reducing it to a puree that is then sealed in 200L drums and immediately
frozen to -18o Celsius. When required for bottling, the fruit is removed,
defrosted and blended to the final recipe.
Apples
Alpine Gold purchases all apples from local growers
from February to October and stores the fruit until required. At which
point apples are placed in water, hand sorted then conveyed to a hammer
mill that produces an apple mash which is then pumped to the press at
which point the juice is extracted. After spending 12 hours in a tank
with a special enzyme which depectinizes the fruit the juice is then ready
for bottling or to be blended with any other fruit such as Rasberry.
Apple/Berry
Mixes
In the case of the berry/apple mix juices, the berries are processed just
prior to being blended and bottled. Berries are sourced from growers
at the peak of their ripeness then frozen. Prior to bottling they are
defrosted with apple juice then processed through the finisher.
The final blend is then made with additional apple juice and an
amount of sucrose then bottled immediately.

Bottling
The
bottling process utilises a plate heat exchanger that pasteurises the
juice prior to filling. The juice is filtered and then heated to 90°
Celsius before bottling. The bottles are then filled with the hot juice,
which in turn sterilises the bottle and cap. It is the heating of the
juice and "hot-bottling" that allows us to produce quality juices
with no preservatives and a shelf life of 18 months.
Once cooled, bottles
are labelled and packed into cartons ready to ship to our customers throughout
New Zealand and around the world.
